I can’t believe it’s nearly been two whole weeks since I last posted. Where is the time going?

We* have been quite busy recently though so if you’ll allow me, I’m using that as my excuse. You see we moved into our two bedroom flat just over two and a half years ago. But until now it’s really been a one bedroom flat with a spare room so full of junk you couldn’t move in it. So we’ve emptied it, bought some carpet, have had a trip to Ikea, built some furniture, put pictures & blinds up and generally had a big clear out and have then (in a tidy manner, of course) have put back in what we need.

Its a really nice room now, even if I do say so myself. There is just one thing that’s missing and that’s a small 2 seater sofa. So another trip to Ikea is needed but we just need a vehicle bigger than out ickle C2.

(*I say we but I’m sure Hubby will disagree. But seriously, nothing ever gets done with out a project manager/supervisor/general all round bossy boots…)

Since making the Christmas cake I have cooked, I just haven’t had enough time to blog about it. So here is a little summary with pictures:

My first ever Toad In The Hole (Jamie recipe) – severed with the suggested red onion gravy it was delicious and I was very proud of my yorkshire pudding.

We followed this up with some Toffee Apple Crumble – in fact we’ve had this twice. Once made with normal eating apples and once with bramleys (rather than the 50/50 mix suggested by Simon Rimmer). We both much preferred the bramley only one as the sweet sauce is more than enough sugar to match the tangy bramleys.
I also turned this pile of chopped vegetables…


into one of our favourite soups – Lentil and Chestnut Soup


Ingredients

  • 1 small onion
  • half leek
  • 1 carrot
  • 1 stick celery
  • 2 tablespoons olive oil
  • 225g red lentils
  • 1.5 litres vegetable stock
  • 225g cooked chestnuts
  • double cream to serve (optional & not really needed)

How To Do It

  1. Finely chop the onion, leek, carrot and celery.
  2. Heat the oil in the pan, add the chopped vegetables and let sweat until soft.
  3. Add the lentils and stir, then add the stock.
  4. Bring to the boil and simmer until the lentils are very soft (about 40 minutes).
  5. Add the chestnuts and simmer for a further 20 minutes or so.
  6. Liquidise (I used my hand blender) until smooth.
  7. Sprinkle each full bowl of soup with parsley and lace with cream as required.
  8. Consume with lots of crusty bread and butter.

Its truly delicious.

Whilst I’ve been AWOL we also had Children In Need day at work and that means one thing – cakes, cakes and more cakes. I made my cupcakes with pink & white icing with flowers and I also tried some vanilla shortbreads – they were ok but a little soft & not quite as nice as I’d expected. Here they are among some of the other cakes brought in by my colleagues…

We are Still Catching Our Breath… Category: General

Last night we got back from a fabulous week (well, just over a week) in Scotland. The holiday was refreshing and we thoroughly enjoyed ourselves. We even managed to fit in quite a few culinary delights which I will blog about very soon. But for now (well Nigella has just started!) here is one of my favourite pictures from our break… how cute is he?

A very foodie Birthday Category: General, Other Foodiness

Yesterday I turned 30.

However, as depressing as it seemed, it turned out to be a very good day. For starters it was a Saturday! and my day started at a 9am appointment at the hairdressers – as we were going out she finished it off in a flicky out – going out style. Hubby dropped me off at the hairdressers as he ‘stuff’ to do then picked me up & we went home for a nice cup of tea & some very tasty buttery croissants.

Whilst I’d been at the hairdressers he’d nipped about in the car to collect my birthday presents which he’d kept out of sight at his mum & dads. So I can home to a nice few surprises. The first two presents were Nigella books – Feast & the new one, Nigella Express – this is a really nice book with lots of pictures.

My third & main present was this…

The one I have is cream & it perfectly matches my Nigella bread bin & other paraphernalia so I was very excited and very happy as you can imagine.

My fourth present was a bottle of

The first (& only) time we drank this champagne was on our wedding night in Malmaison. Even at midnight we thoroughly enjoyed it so this was an extremely nice present and I cant wait to open it!

Apparently there is also fifth present that the postman is yet to deliver… I have no idea what it is!!

I also got an array of presents from friends and family- the highlights of which include two more bottles of champagne, a rather nice block with 5 knives (Anolon) and a knife sharpener, a pure pamper session, two bunches of beautiful flowers and some money & vouchers.

In the afternoon I had a nice relaxing bath & then we headed out to my mum & dads where we met up with my brothers, their girlfriends & my Gran and we headed out to Ego Restaurant in Heswall. We’ve been quite a few times as the food is always fresh and tasty. We weren’t disappointed. Another restaurant we’d always recommend.

Pick-me-up Lunch Category: General, Other Foodiness

I’ve been full of a horrible cold all bank holiday weekend & I’m feeling no better (if not a bit worse) today. I’ve had to call in sick to work as I am not up for anything except dozing in bed & watching bad daytime TV.

So to make myself feel a little bit better I made my myself a traditional lunch for such occasions! Chicken sandwiches with Heinz Cream of Mushroom soup.

We have a birthday to attend later tonight – luckily I have to move nowhere as Liverpool is celebrating its 800th Birthday with a firework display right opposite our settee. How very kind of them, I dont even have to get dressed properly! With any luck some we may get some good pictures.
