Yesterday I came across this recipe via tastespotting. Now I’ve been on the look out for something like this for ages and as we’d made some granola a few weeks ago, I had the ingredients in to give it a go.

It was very quick and easy – I adapted the recipe & amounts to what we had in and I didn’t want too much sauce to glue it all together…

It went something like this:

450ml cups of oats

a good shake of oat bran

80ml packet of mixed seeds (sesame, pumpkin and sunflower, i think!)

100ml cup of desicated coconut

150ml honey

150mlsoft brown sugar

2 teaspoon vanilla essence

50g butter

pinch salt

(sorry everything is in ml – from the American cups, i used a jug with cups conversion)

Put oven on 200°c

Measure out oats, oat bran and seeds on baking tray and pop in the oven for 10/15 minutes but keep moving the oats around every couple of minutes

Whilst oats are toasting, put the honey, sugar, vanilla essence, butter and salt in a pan and warm though until melted

When the oats are toasted, transfer to a mixing bowl and the sultanas and coconut

Pour over the ‘sauce’ and mix thoroughly

Line a dish with greaseproof paper and put the granola mixture in, pack down tightly

After 3 hours you can take it out and cut into pieces

Ours made enough for us to have for breakfast at work next week – as we have been making an early start due to some 12 weeks of roadworks enroute.
